About: Françoise Fillioux (or Filloux), (2 September 1865 – 22 October 1925), known as "La Mère Fillioux" or "La Mère Filloux", was a French chef, proprietor of a famous restaurant in Lyon. Among her successors was Eugénie Brazier, who worked in her kitchen as a young woman and continued her traditions of Lyonnaise cookery. Françoise was born Benoîte Fayolle, on 2 September 1865 in the commune of Auzelles, in the Auvergne, into a large family. She went to work, first in Grenoble and then in Lyon, in bourgeois houses, including that of Gaston Eymard, a director of an insurance company and a dedicated gastronome. Over the next ten years, she learned there, to cook to a high standard. She married Louis Fillioux, whose father owned a building in the center of Lyon. The couple opened a Bistro there. From modest beginnings, it became nationally, and to some extent internationally, famous. In a tribute published after her death, La Tribune asked rhetorically, "Who is the traveler, who is the tourist, who did not know La Mère Filloux in Lyon?". "It looked like the original Bistro … the parquet floors, tables, plates, and linen showed no refinement. But what was served there was such that no foreigner would have failed to make the pilgrimage to this distant quarter. Especially in times of fairs, it was impossible to find an available table there. The house's originality was… to serve the same menu continuously since its opening. Each dish on this menu included truffles in its preparation. The soup was full of them: a very strong consommé, of which a large terrine was placed on each table. Then came truffled dumplings, served directly as soon as they came out of the oven, still steaming and giving off an exquisite fragrance." The menu varied more than the paper suggests – it included hors d'oeuvre of ham, sausage, and galantine, quenelles au gratin with crayfish butter, and game in season. Fillioux became famous for her main course: "volaille truffée demi-deuil" (truffled chicken in half-mourning). The dish consisted of a Bresse chicken poached in chicken stock, with slices of black truffle inserted under the skin. (When it was cooked, the truffle showed through the white skin of the chicken so that the overall appearance was black-and-white; hence the name). Fillioux would carve the chickens at the table, using only an ordinary table knife, a piece of culinary showmanship later practiced by Eugénie Brazier, who trained under her. After the chicken came to the artichoke hearts with melted butter on a large truffle base. The meal would conclude with pâtisserie, cheese, or fruit. In 1924, a year before Fillioux's death, the influential food writer Curnonsky, France's "Prince of Gastronomy," wrote, "She is as famous as Marechal Foch, Anatole France, Kipling, Chaplin, and Mistinguett. She is a great star and also a lovable Frenchwoman, one of the greatest cooks on earth". (Credit: Wikipedia)

  • Untitled ("Motion-Sound" Landscape)
    By Ralph Eugene Meatyard
    Located in New York, NY
From a portfolio of ten gelatin silver prints from original Meatyard negatives (1959-71) Printed April 1974 Edition of 130 Credit stamp, verso 7 x 7 inches, image 15 x 12 inches, mount This artwork is offered by ClampArt, located in New York City. “Meatyard searched continually for a non-objective art that would be wordless poetry, spontaneous music without sound. The ‘Motion-Sound’ pictures of his later years brought Meatyard’s passion for music and, paradoxically, the silence of Zen Buddhism together in photography. In creating the series, he focused the camera on a natural scene (or one containing plain rural architecture) and then moved it slightly. The result of this action is an image that suggests sound while abstracting natural forms. The landscapes of the ‘Motion-Sound’ series are in stark contrast to the evocative, more traditional views of the Red River Gorge that Meatyard was executing during the same years.” —Judith Keller, Ralph Eugene Meatyard (London: Phaidon Press Limited, 2002), p. 122 An optician by trade, Ralph Eugene Meatyard was a self-described “dedicated amateur” photographer. He pursued his own vision to produce an exquisitely enigmatic, widely admired body of work. Meatyard began taking photographs in 1950, roaming the backwoods and towns in Kentucky, experimenting with framing, multiple exposures, and blurring to produce haunting, abstracted images of natural and manmade environments. In the late 1950s, he began incorporating monstrous, oversized latex masks...

Signed, titled, dated, and print date by Mario Algaze Mario Algaze is a contemporary Cuban-American photographer whose work articulates the counter-culture of Latin America, the Caribbean and Cuba. In 1960, at only thirteen years old, Algaze was exiled from Cuba. He relocated to America and settled in Miami, Florida. Miami offered a rich cultural mecca that encouraged Algaze to travel throughout Central and South America. These trips allowed him a glimpse of belonging within a familiar culture. In finding his identity after exile, he began photographing Latin America in the 1970’s while reconnecting with the feeling of home. His photographs embody the everyday of Latin life. Between his travels in the late 70’s, Algaze studied visual art at Miami Dade College. Algaze’s masterful command of light illuminates his street scenes that detail the struggles and victories of Latin culture. The vision Algaze has made him an award-winning photographer and in 1985 was the recipient of the Individual Florida Artist Fellowship and in 1989, received the Cintas Foundation Fellowship in Visual Arts. A retrospective collection of his work from 1974-2008 is showcased in his book A Respect for Light: The Latin American Photographs...
