<\/p>\n

Hospitality and food have been the most famous standout qualities of Danny Meyer\u2019s restaurants to be sure, but the designs of the spaces in the Union Square Hospitality Group may be the unsung heroes.<\/p>\n

Think of the relaxed Americana<\/a> feel of Gramercy Tavern, or the pops of Renzo Piano<\/a>\u2019s signature red color in the airy ground-floor dining room of Untitled, at the Whitney Museum of American Art.<\/p>\n

Peter Bentel, the cofounder and partner in the design firm Bentel & Bentel, has worked on eight of the eateries, starting way back in the late 1980s, when Meyer needed renovations on the original Union Square Caf\u00e9. \u201cDanny really allows time and patience for the design process to evolve,\u201d says Bentel.<\/p>\n

Many of Meyer\u2019s touchstones were in Italy, so Bentel and team got on a plane to research restaurants there. \u201cIt was like getting a doctorate in restaurant design \u2014 we dug deep,\u201d the designer recalls. \u201cWe established a lingua franca with Danny.\u201d<\/p>\n

And it won\u2019t surprise anyone that friendliness and efficiency are paramount as the schemes are planned. \u201cHospitality is a huge influence,\u201d says Bentel. \u201cThings like, how close are the greeters to the door?\u201d<\/p>\n

The chefs and the other staff are given a space that lets them do their best, and that translates into a good experience for diners. \u201cIf a waiter has to march across the room to get a clean glass, he or she will be frustrated, and it will take longer,\u201d Bentel notes.<\/p>\n

Design vision<\/strong>: Sinuous lighted glass walls both bind and separate the two components of the restaurant \u2014 the Bar Room at the Modern \u2014 with gauzy veils of light. Many of the restaurant\u2019s iconic design features, including the glass wine-rack wall, reiterate the idea of modern design executed in rich materials.<\/p>\n

Standout work of art or furniture<\/strong>: The Modern overlooks the Museum of Modern Art\u2019s Abby Aldrich Rockefeller Sculpture Garden, which features works by Mir\u00f3<\/a>, Matisse<\/a> and Picasso<\/a>.<\/p>\n
