What is a duck press used for?
A duck press is used to make the French dish canard à la presse or pressed duck. To prepare the dish, a chef removes the breasts and legs from a whole duck. Then, they place the duck in the press and turn the crank to extract the juices and blood. The liquid becomes a base for a stock used to dress the cooked breasts and thighs.
