What lambethware is made of is pottery. Specifically, lambethware is a type of stoneware made of vitrified pottery. Its distinctive appearance is owed to its salt glaze.
While early pieces were made by Royal Doulton, a manufacturer that started in London in 1815 but later moved to Lambeth, establishing a factory for producing stoneware, these are distinct from pieces made by Doulton & Co. in Burslem. This earthenware manufacturer was originally Pinder, Bourne & Co. and renamed Doulton & Co. Ltd. after its acquisition in 1878 by Doulton & Co., and in the 1970s made reproductions based on the older lambethware designs.
