French Antique Copper Preserving Pan with Wrought Iron Handles, 1800s

This French antique copper preserving pan with wrought iron handles was used to bake jam or other sweet food in the 1800s. The three reasons why these copper pans work so well is that it- evenly spreads the heat and, since most fruit contain pectin needed for their gelling capacities, the copper helps the pectin molecules bind together and lastly the splayed shape helps water evaporate causing the concentration of natural sugars which prevents the needed addition of too many sweeteners. If you make preserves or jams or sugared almonds this pan is a must. If you want a beautiful bowl to hold fruit or decorative objects this would add an elegant 1800s French touch.
