No other metal can be counted on to absorb heat and distribute it as rapidly and evenly as copper. Similarly, when removed from the heat copper responds quickly. As a result of the responsiveness of copper cookware it has been the go-to choice for chefs and cooks all over the world. About Allez Frères: Allez Frères was a large French hardware store located at 1 Rue Saint-Martin, Paris from 1856 into the 1930s. Allez Frères commissioned their copper cookware from Villedieu-les-Poêles. Allez Frères began offering its line of copper cookware in 1873. The last catalog showing copper pots with the distinctive trefoil handles is dated 1908. After that, copper cookware in the catalog has handles with the classic horizontal lozenge shape.
