Antigua's national dish is Fungee, and Pepperpot, cooked by locales primarily for special occasions such as Independence Day (November 1st) throughout the island nation and sold by local roadside vendors throughout the villages.
Pepperpot is a stew of sorts with the basis of meat, spinach, and okra. But every skilled chef of this dish adds their flair of ingredients, vegetables, and spices, just as this wild tamarind seed purse is sprinkled with eye-catching jumbie bead seeds throughout the design.
Botaniqué allows the consumer to explore and celebrate African history, albeit under the jurisdiction of the diaspora.
